How would you play someone that is very aggressive and shoves alot?

Yeah, you played it the right way. Best way to beat these players is laying low expecting them to raise most of the times so you don't have to do anything just call or raise all in with a decent pair.

In general, it all depends on what you are playing. In cash games and tournaments, strategies must be different. Personally, I prefer slow tournaments, so I do not have to play aggressively. I prefer to wait patiently for good cards.
