OF course this is somewhat mitigated by the sheer numbers. If you are up against a guy who regularly plays 12 tables and buy a bunch of HHs for your stake, then you'll have history on him for ALL the hands/tables he plays, and even if you don't know his showdown cards you do know how often he folds to three bets on the turn.
