I've had this discussion with several poker buddies recently, and was curious what the folks here had to say.

I'll start:

I have three that I like, in ascending order:

3- Desert Diamond Casino in Tucson, AZ. - I didn't pick this one for the game selection, or the massive cash flow I (didn't) earn, but for the memories. I pretty much learned to play poker here, and loved the experience. The staff was great and friendly, and I frequently hung out there after playing. I even considering becoming the brush there, but decided to move back to Virginia instead.

2- Tropicana in Atlantic City: The Trop is decorated in what I call "seedy Vegas" and I loved it. There was a decent (not great) game selection and a decent crowd. After moving to Virginia, I quickly settled in to playing 2/5 NL here every two or three weeks for a while, and enjoyed the crowd.

1- The Horseshoe in Tunica. If I ran a poker room, it would be just like this. Good game selection, great staff, excellent comps and poker room rate, and about the best atmosphere I've encountered. I went here on vacation in '07 for five days and thoroughly loved every minute of it. The only downside is that you have to drive 45 minutes to do anything other than gamble, which didn't matter to me, as I was on poker vacation.

Honorable mention goes to the Borgata in AC, where I played for the first time last weekend. Great looking room and game selection. We'll have to see what the future brings as I play here more.
