Which platform are you referring to?Do you also have strange, non-reality flags instead of real flags when clicking on an individual player? Any African countries, for example?
Are updates not mandatory? At least here, it's not possible to play if you don't have the latest version.

It should be possible to disable Aurora graphics (completely) or at least they should put a lighter version to attend other players. It's may appear as PS can be loaded only through PokerstarsUpdate.exe, since that's the file which appears on the desktop after installation. When you load the client through it, it will search for updates first. But if you go to the PS folder and find the second .exe file - Pokerstars.exe, then the client will immediately load without checking for any updates.
When the version you use is no longer possible to play on without updating, PS will warn you about it upon logging in (happens once in a couple years).

Perhaps the idea is to leave poker in the background and prioritize sports betting and the casino.
