In the PokerStars client select "My Stars" from the right hand side. This will show you how many coins you have accumulated.
From there you can then visit the Rewards Store to spend your coins.
Alternatively you can spend your coins entering "The Deal Jackpot" by selecting this at the top of the client window.

I play the big deal when the Jackpot is high. One game gives you a chance for 12 hrs if somebody hits the jackpot you get a little split.

I usually wait until The Deal Jackpot is over $250,000, and then play it every twelve hours until struck. Half the jackpot goes to the winner and the other half is divided between all players who played at least once in the previous twelve hours.

Another option is to try and win a seat in the $11 Sunday Storm. Make sure "All" or "StarsCoin" is selected in the main lobby, (see attached image).

If you select "My Stars" and then "Rewards Store" there are many other options.

Rebuy satellites to Sunday Storm is a best bang for your stars-coin you can get.

A level of play in those is insanely bad. If you enter it from level 1 you can stack up relatively easy. Also do not rebuy once the blinds go up, just enter a new one instead. There are plenty of them running.

On the first of every month, my unused Star Coins are converted into cash. So I get a small bankroll to continue playing
