pokerstars calls a tournament where you start with 10k in chips a Deep Stack. On what planet is 10k in chips a deep stack?

25k, maybe. 50k is more like it. 100k definitely.

What starting size stack do you consider a deep stack ?

It depends on the BB.
A 10K can be a deepstack if the BB start at 10. But a 100K is not a deepstack if the blinds begin (for some reason) at 1000.
