The only games that I do this with are Craps and
baccarat. You can run good in the short term, but the fundamental nature of the game is biased against the player. Stay too long, and you
will lose. (I've seen lots of times when it seemed as if the sevens were erased from those dice, the numbers, hardways, and prop rolls hit and hit for some truly juicy wins, but I have never seen one take it home.)
When it comes to Poker, no, definitely no. If your concentration is good, the fishies have loads of chips, or are reloading, or there are fish waiting to join the game, I'll play as long as possible, regardless of outcome. If you have the advantage, why not capitalize by corralling as much as your mathematical expectation will allow?
Sure, you can work up a nice stack, then stack off to a nasty cooler, but coolers are part of the game, and can occur at any time. On the other hand, you can stay after winning two buys, then win three more. No predicting that, but one thing you
never hear is anyone's asking: "Why didn't you quit when you were $X ahead?" after you've taken home $10X.
Setting "goals" is not only bad mathematically, as you'd be foolish for walking away from a rich donk-a-thon where you could win much more, barring outside circumstances that could make you -EV (too tired to concentrate properly, some fresh players have joined the game, the arrival of opponents better than you, etc).
They're also bad psychologically, and can lead to minimum win/maximum loss scenarios where you frustrate yourself by getting close to the daily goal, then getting coolered. Trying to win it back is certain to lead to total disaster.
It's better to satisfy yourself that you're +EV, making good decisions, playing properly, and letting the wins and losses take care of themselves.
The very last session I played was all win/lose, up/down and at one point I had 2BI. Lost it all to a cooler, got chopped down some more over a six hour run. The table thinned out and it looked like the game would break, but, forch, the remaining players were willing to play 4, 3, and 2 way. Went to my A short game (the other fish
didn't adjust) straddled every button 3 way, and outplayed them post. Took home 3BI+ when the game finally did break two hours later. If I left with 2BI, I would've cost myself a bunch. Other times, the happy ending (@#&*^!!!) didn't happen, but you can't worry about that.
