I think I was a bit over exited on the turn by asking All In from the villian might look a bit suspicious to him.

How can I optimize my bets here to get all his coins on the table?

Getting paid here depends on what he had.
Either call the turn and raise the river (if he has something he wants to barrel three streets with), or raise the flop and keep betting, or min-raise here and get it in on the river.

Your turn shove looks like you have the nuts, so he could've laid down AK here.

That seems to be the key, with a call on the turn (and something that he hit) it´s quite possible that he bets on the river.

But I´m very scared of flush draws when I hit my set. Maybe that´s the reason why I want to finish quick.
