what are the odds of getting more than one player with pocket pairs on a six or eight-player table?

Having also another player holding a pocket pair is not uncommon at all.

Let's say you are holding 77. It's a six player table and five players act after you. The probability of someone having a bigger pair than you have is still 17.5%. On eight handed table the number would be 24.5%. This is called the Gordon Pair Principle.
