There's always something to write down, until your memory gets used to the information you've acquired.

Take notes frequently.
But when it comes to enemy player types, I don't.

In the beginning yes, then I learned how to pay attention to the players and start getting notes of them.

The more notes you take the better.
There is an old saying about NL poker "Short time to learn a lifetime to master"

No one masters NL poker without taking many many notes that they can refer to all of the time.

Hi.
I often use notes and usually all the notes I make during the game. Mostly I notice players who play with junk, players who often bluff, and players who are patient and play only with strong cards. Sometimes my notes help me make good decisions.
