What's the difference between an online poker tournament with a single table and a multi-table tournament?

Multi table tournament is a tournament, in which there are enough players to play on more than one table (typically there is 6 or 9 sits for a table). When people are eliminated, number of tables decreases until all of the players can sit at one table, called final table. The example can be 18 players tournament: 3 tables with 6 sits or 2 tables with 9 sits. MTTs can be small (like 12-18 players on 2 tables) or very big like for example world series of poker Main Event (almost 7000 entrants last year).

Single table tournaments are just smaller: when number of players allows to use only one table (so typically 6 or 9, sometimes 10).

Actually some poker clients use the name sit&go as the term for tournament registration, not number of tables (pokerstars, party poker afaik). It means that it is not scheduled, it starts when required number of people registers.

Usually sit n gos are 1-3 tables. MTT usually have hundreds of players = lots 20-1000 tables depending on the type

The main difference is in controlling the game, when you play at one table, you can completely immerse yourself in the game here, usually one table is played in heavy tournaments to achieve a certain result. The multi-table game is applicable either for freerolls or for tournaments with small buy-ins.

1.Sit-and-Go - a tournament that does not have a predetermined start time. It can be held as a regular tournament, or in the form of a satellite.
2.Multi-table tournaments This format is characterized by having several gaming tables and a specific start time. To multi-table tournaments are: freerolls, tournaments with and without guarantee, satellites, freezouts, with Re-buy / Add-On / Re-entry, with rewards for knockout, heads-up, turbo.
