Not trying to be clever here. But from what you asked, what you're really asking is how to deal with a good player who has a read on a card chaser.
If you have a better hand, then raise. If not, then you wait for one. That's how you deal with a fisherman (LAG).
If he's a better player, then you're in for a fight. Never... EVER play another mans game against him. Unless you have his game down. Still dangerous with a LAG.
Once you have been in enough of these fights, you'll recognize those scenarios. Then you'll have something to base your decisions on.

how to try that stuff.
Bottom line is you're gonna hafta be in those situations to recognize them.
