I don't know where you learned that definition of gambling from. Personally, I have never heard or seen it that way.
As far as I know, gambling is just the activity of placing a bet on an uncertain outcome. It has nothing to do with short or long term profitability.
I think your understanding is that the more astute you become at using a poker strategy, the less you are gambling, and poker becomes more like chess. That, in my opinion, is wishful thinking. Poker is poker, and gambling is part of it, and no matter how much you study you still have to gamble four times each hand you are playing: before the flop, before the turn, before the river, and after the river.
You can make a fortune as a great poker player, but you would still be gambling four times each hand you are playing.
