At this point I don't think any of the sites have any actual Linux compatible clients, but many of them do work under WINE. Also, sites that have Java clients through the web browser should have no problems as well. The only one I can think of anymore like this off the top of my head is Bodog, but I know some of the Euro sites have them as well.

I have used pokerstars using WINE on Ubuntu. I remember running into problems multi-tabling. The effect of bringing a table to the front of the screen when play came around to my seat didn't work entirely, blanking out the edged of the program window, but I was still able to play. If a poker site/program uses flash, which I'm unsure about, it's really iffy on Ubuntu. I've seen one computer use flash well, but another crash it time after time.

WINE is workable to some degree for some poker clients, but for the best fidelity on Linux your best bet is to run a Windows VM. This will allow you run a tracker/HUD as well, which won't work under WINE. I live in Linux much of the time, but any sort of gaming/poker is done on my Windows machine. If you don't want to deal with a VM or two different PC's, you could also look into dual-booting Windows and Linux on the same PC, where you use Linux for most things then boot into Windows for poker or whatever requires it.
