Tables falling apart, because the only fish has left, is indeed an aspect of cash games, which can be a bit annoying and tiring. 6-max tables are more prone to this, because there is often only one fish on each, and it only takes a few players sitting out, because its hardly even a ring game any more. 9-max tables tend to be a bit more stable in general.
For the record while HUDs do make table selection easier, there are certainly other ways to identify fish than to use a HUD. Fish are basically people, who play to many hands, and who often play them passively before the flop. So one can basically look out for, if someone at the table are involved very often, and for instance limp into a lot of pots. Other fish tells are weird stack sizes, weird bet sized and posting a blind. Basically anything, which is not good winning poker. And of course seeing hands at showdown also does a lot to let you know, if someone is a bad player.
This is just to say, that even if you play on a poker site, where HUDs are not allowed, you can be pretty sure, that anyone, who is trying to win money in cash games, are going to be doing some table selection. It is telling though, that so much table selecion is going on even at 2NL, that you actually notice it. It say quite a lot about the online poker environment anno 2020.
