Kind of a weird question but overall how do they know how much chips they have, how much the other guys have and when someone bets how much to call? It's like you have to be rain main guys throws out 17,500 across the table and on tv they call with a huge stack real quick like I mean how do they know? Unless your constantly counting that pile of chips then it's not like you have a digital hud telling you how much everyone has and it's kinda hard to tell from across the table.
THIS IS LIVE OF COURSE.

Isn't it the dealers job? .. hence the dealers announcing who and how the raise is/stack is in all-ins etc

The dealer announces the bet. It's up to the players to observe each others stack but players are allowed to ask for counts of stacks at any point. If the player does not wish to count then the dealer must. And it's up to the player to know how much is in the pot.
