One time I could not understand why opponents called all my raises with flushes (J or even T high) when they had only sets or 2 pairs ...

But now, I realise, that's because psychology of hand strength.

If you get set on flop (we all know that it is very very strong hand with full-house draw) you option start use slow play... As biggest enemy of slow play, now I can explain, right for the river you want to get full-house and will called all bets to make stronger hand.

But! But if I close my flash or straight vs your waiting full-house, I will go all-in and be happy even with 9,8,7,T,J high flash, and trust me, you will call!!!!!!!!!

What about the same situation but vs yours 2 pairs.....I really don't know...

Maybe same full-house draw or something else...

I'm not sure I quite follow, I've called a flop shove on a mono tone board with a set before, often people will shove with overs and a single card flush draw. Other times it will just be overs no draw haha.
