When I search for this question I mainly get results about the differences between them, but I'm not even sure about the definition itself.

I got one result that explains that it could refer to the minimal buy-in for a cash table, equivalent to 100bb. Is that correct? (e.g. 2NL thus meaning 0,01/0,02ct cash table)

Good question. The answer is yes -- for example NL2 means a game with $0.01/$0.02 blinds such that the typical buy-in of 100bb would be $2.
