I think cash games certainly have the least variance because in a game structured like a tournament, where the blinds go up and antes start, you are forced to play hands or risk blinding out. In a cash game this doesn't happen. You could just sit and wait for a hand, you aren't "forced" to open your range.

Once you get past structure, the same math applies to your hands in both cash, SnG, and MTT.

You need to realize what variance means. Its the ability to have very large swings in chips in relation to BB and large swings in percentage busts- meaning losing as a 85% favorite. This is basic definition. What this means is

1. More players = more variance

2. Higher % differences preflop between hands = more variance.

Conclusion:

1. Heads up has least variance

2. No Limit Texas Holdem has the most variance

Variance is not always a bad thing, depends on your style of play...do not fear it...adjust to make it an advantage

Cant edit on phone so here is edit

No limit is higher variance than limit or pot limit.
Reason is you can lose or win more BB in one hand than other games.

More players is higher variance because all above can happen more frequently.

Btw tourneys are only higher in variance than cash games once the number of tourney players exceeds the number of cash players in the comparison. There is no other variance difference between cash and tourney...its all about the game and the betting structure.

One more...more players in a tournament is more variance because you can win more vs. your entry...this is a great thing

I would pick cash games . In tournaments you play with too many players with different stack sizes and play styles , you play a lot of more hands in every game , many hands that you wouldn't play in a cash game because the blinds are low or the stack are very large (BB>>) ,so wider range , in the micros more donkey calls in tours so more bad beats , etc
