I understand what are the outs and pot odds ... etc

but given current hands and without the knowledge or others' hands,

is there a systematic method or an equation to compute the equities without using the calculator?

In real life situation, when using the equities calculator is impossible, having the ability to calculate the equities would be a good strategy.

I somehow think that "counting cards" like the way you do in blackjack could be modified and be implemented to calculate the equities though....

There is a book written about how to count outs, but I don't remember the name and have never seen it.

but "outs" and 2-to-4 rule basically approximates the probability you're going to get one of the outs, but i'm talking about probability of winning which takes into the account of the current number of players playing, the current hands...etc

Is there, say, a method to calculate the probability of winning if i have a pair of something given this number of players, and given this flop... etc ?

You can use probability calculations with combinatorics, fueled with handreading skill. Then use your poker skills to fill empty spots. That is the closest thing you get of scientific method I would guess. Rule of two can be used also against multiple players, both for hero or for villain. Because of complexity range ev calculations offline is mostly used then just applied on the table.
