How regular do i have to worry about being beaten by 1-outters

Was in a tourny today, was pretty early in the tourny and i was on a good run, was prolly up double the starting stack within 4-5 hands. Soon after i was dealt AQs, normally dont like aq and play very cautiously with it but figured i had over 150 bbs so i would play round. Any how short stack alled in with $400 and i called and villian then reshoved forcing me to call about 1200 more. Were certainly not the best odds but i was around 5k so i figured i would gamble see what happens.

to my delight short stack turn over pocket jacks and villian turned over AJ. i was happy with the side pot and didnt at all mind giving $400 away for $1200. wouldve still be a 800 profit, anyhow the flop came 2 7 9 rainbown, turn came 3 and the river cam a f****g jack. like seriously, how regularly does something like that occurs and of allllll the other cards to come a jack really and trully came?? i was totally bewildered. Would like to hear your thoughts guys

2.5% of the time I'm worried.

My most recent 1 outer defeat was a three player hand as well.

I had QQ in the big blind. EP opened, btn 3 bet, I 4 bet, call call.
Flop comes Qs7d8d . I checked, EP bets, btn calls, I raise, EP shoves, BTN calls, I call.

3 All ins on the flop,
I have top set, QdQc
EP has AcAs
BTN has AdQh

Turn comes ace of hearts and EP takes the pot.
