Well profiling is a good way. One thing I do is look at who is who. Spotting the drunk is easy, the crazy asian gamblers (typically loose aggressive), the businessmen who dont care to lose 500 to get away from their wives for a night, the old rock NITS who never play anything but AA KK QQ AK AQs and the solid tight aggressive players. A good way to tell how much money a person has, and this trick has almost always worked for me, is to look at their shoes. Seat selection is usually limited to u get whatever seat you're supposed to. I'm not sure how it works at your casino, but I know here if you're next on the list you can offer to buy a players seat. Sounds crazy, but if theres a donk just dumping off money, and u can get a seat 1-3 spots to his left, I've offered $10 before for the seat. It usually pays for itself within the first 30 minutes
