With just one pair the river is pretty late to be getting it all in and be assuming your good. You could be up versus a set of queens here, or even nines or kings, or two pair, or even a straight. TPTK is a killer to go to the river with.

So yeah, I probably check there. If I'm good, I'm good and get a pretty decent pot. If not then I'm not going to make it worse and slit my own throat.

he 3bet you pre...and based on those stats he obviously isn't the biggest donk in the world, so yeah i would definitely check back the river.

And what should I've done pre-flop after the 3bet?

Flat his 3 bet, he's too tight to be doing this with too many hands we dominate.
