Calling is only good if his range is wide and he'll fold most of it to a 5bet and he will cbet reliably (without reads, we can assume this isn't the case).
I don't want to stack AKo 140bb deep, so I'm considering a raise to be a bluff and I'm not 5bet bluffing at 5nl. That is, unless he's a spewy fish and we can still value shove this, but again I'm not doing that without reads.

I think 3bet-fold is good. I might also suggest just calling his initial raise with a dominating hand and position, but the 3bet is standard for most people.

What is his 3-bet %? What's your sample size for those stats?

depends, i would say mostly on his vp, if he is trigger happy i would shove.
