Premise: at the moment, because of the previous couple of hands, I felt like SB was light 3betting me. But I honestly cannot be that sure about it.

Am I just being a fish? Or is it an ok play? I call every street until the 3rd barrel shove on the river.. at that point I decide I believe he as AK or better and fold.
Should I have done something differently? Fold before? Do you think he is bluffing me?

Call the river. Even though you only beat air, your opponent is quite loose and aggressive. bluff catching against these types can be pretty profitable.

Given your call on flop and turn, I think you have to call the river

It's a characteristic spot where you don't have fold on the river.

His silly 30%.....cbet on the 2-flush flop and 75% bet on a blank turn doesn't make any sense. You can't fold AQ TP on a dry board like that+blockers you have. If he woke up with an AJ, so be it......

You must look at stacks and bets on every street and see If your stack is being treatened. When he bet 80% on turn there will be less than a full pot to bet on the river. So he will probably shove most rivers.
Think about on what rivers will you call his shove or fold his shove. If you only call If an A or Q hits the river, pe not even that.. just fold the turn pe call and just look at the river and.. call or fold depending on what you've decided on turn.
