I got a double gutshot on flop, and another 4 straight outs on turn. Do I get enough folds here to make a shove profitable?

I'd fold the flop. Here I'd flat because I think we have enough implied odds to stack him on 7 or Q and there are arguably enough bluffing cards to get him off AAxx/sets/straights.

I'm folding to the 3bet pre, and I expect to be called a lot when you ship the turn. I also prefer flatting the turn. Implied odds>FE in this specific case.
