I usually make a lot of notes from my opponents, observing how he is playing is a good tip, everythingwill help you with this arduous task of reading your opponent

I look at how often a player sees a flop and play them accordingly. I also look for players betting patterns to get a since of how they play.

In my game, I do not use HUD. For reading players in online poker I use notes - this is the main method. As an auxiliary method I use - speed ​​of action of players and the size of the bets.

As you have no visual contact with opponents during online play your best way to analyze them is statistics. Yes you can manually take notes of people's game and it will help but HUD (of course when you have enough hands played with someone) is the easier way to do that.

Classify your opponent.
Give it a starting range based on its position and actions.
