I've watched a few players play hands blind live before. Not a whole tourney but I believe it could be done. Certainly not easily and you would have to be a really good read.
One time I played live and a player known to do this bet heavy when everyone checked around to him, I watched him carefully and knew he had not looked at his cards. I let him bet the K high flop and when I was the only caller he bet the pot on the turn, I reraised him all in and he said "Guess I better look at my cards now", he looked, folded his hand face up and he had AQ, I then said "Guess I better look now too" and showed my hand of 22. I had looked, but just wanted to mess with him since I knew he didn't look and the other players had folded.
I probably see one person a night when I play live play a hand blind, I think it's a big challenge to some to see if they are good enough to do it.
