More chips is better because it's fun to have a decent-sized stack in front of you. For example, if you have a set of 300 and 10 players, each person only gets 30 to start, and even after half are eliminated, avg is just 60. It's also more fun if the pots have more chips in them, even if the total chip value is the same.

Really depends on a few factors. Do you want to have values on them? What do you want starting stack to be? In our group each host has their own set and all sets have the values on them. Here is a break down of what we start with:
t10,000 starting stack
12 green t25 chips
7 black t100 chips
4 purple t500 chips
7 yellow t1000 chips
we also use pink t5000 chips for bigger starting stack or tournaments that have 24 or more players for color up purposes. Another thing you want to account for is how many chips you need of each color and this depends on how many players usually. If you have 10 or less then a 500 piece set should be fine with the following amounts:
green 25 chips = 125
black 100 chips = 100
purple 500 chips = 75
yellow 1000 chips = 150
pink 5000 chips = 50

I recommend using http://www.pokerchipswholesale.com/?gclid=CMuhp7zbybwCFUVlfgod-lMAPA
you can customize how many of each color you want and they have several different styles to choose from.

think it depends on what kinds of games you play and what kind of players

if you expect beverages may be spilled stay away from the clay chips, otherwise the i think most like the feel of the clay chips better

also if you are playing sng format type games with only 6 people you dont need lots of chips, but if you plan on having 2 tables of 10 running with deep stacks get a ton of chips

I would recommend a 500 chip set. The heavier the gram weight the better. Mine are 11.5g I believe.

All that matters to me is having clay chips and not plastic. Plastic just doesn't feel right if you've spent any time in a casino.
