Advertising and sponsorship revenue is the point. To get that the show needs ratings and to get ratings they show what Joe Public likes - all in hands, not the piddly little pots.
Plus there's a hell of a lot of matches to cover, especially in the early rounds, and they pretty much have to show the elimination hands (which are obviously all in). That doesn't leave time for lots else.
