The shuffling isn't "sometimes" or random, BTW. In any stud hand that goes to showdown, Full Tilt puts all the downcards in numerical order. They do it specifically because
it means you can't tell whether the villain caught their card on the river, or whether they had it all along. The upside is your opponents can't tell the same thing about you either.
As nevadanick points out, live stud players do the exact same thing, for the exact same reason. I don't play on Stars, but I'm surprised if they don't do something very similar.
There's no option to turn it off either, for those who are asking - it's part of the software. If you want to look back at your own hands, the hand history will remind you which cards you had in the hole in what order.
