I don't watch them that frequently, but I have watched them in the past. And yes I do think a lot can be learned from them. If you are truly a student of the game, then you probably watch a lot of poker, whether it be replays of online tourneys, video footage of live tournaments, or even watching games when you yourself are not (don't feel like) playing. I sometimes watch cash games. Sometimes I watch tournaments. Sometimes I watch videos on Youtube, and sometimes on pokerstars. While I might get a little burned out from playing poker, I never seem to get burned out on watching it, because I can pause it or stop it and go do something else and pick it up later where I left off.
