I think your approach was fine and you got the most value out of your aces. Why would you want to jam the flop? You're playing against a nitty player who likely has a higher pocket pair or maybe some premium connectors (unlikely). You want him to stay in the hand hoping for a lower set. I don't see the flush as being a concern in this case.
