Harrington on Holdem is the standard text for tournament players. Comes in three volumes. 1 and 2 are essential, 3 is a book of problems and you can get by without it, if you are on a tight budget.

In addition to the HoH series, there is Tournament Poker for Advanced Players by Sklansky, and Tom McEvoy, alone and in collaboration (Cloutier, Daugherty), has ritten nearly a dozen books on the subject of tournament play.

Kill Everyone has good bits about SNGs and tourneys as well, but I think it focuses more on SNGs from what little I have read of it.

Harrington on Holdem times a million. Pretty much the authority on MTTs and poker in general.

I've heard Collin Moshman's SnG book is good too, but that obviously has much more content aimed at STT strategy.

The Harrington series is pretty much the bible for tourneys, and not un-useful for basic ring play as well.
