I don't recall that they did. It's possible they allowed the maximize button to work by pre-calculating a 16:9 or 16:10 (all of my monitors are 16:10 ratio, but unfortunately they're becoming rare these days in favor of 16:9) layout and scaling based on that. But if you grabbed a corner of the FT client window and dragged, I'm almost certain it fixed (or at least limited to a reasonable range) the aspect ratio to where you couldn't resize to a tall/thin or short/wide window that would be distorted and unreadable/unplayable.
Full screen was never an issue for me because I never played one table. Or if I do play one table, it's because I'm doing something else on the computer at the same time. If I'm only playing poker, especially cash games, I can't play less than 4 tables unless for exceptional cases like a CC League game, where I try not to be distracted by much else. When I played on FT, it was usually 9-16 tables cash or 4-6 tables SnGs. So full screen was never a concern for me.
I have no way to back it up, but I would be surprised if a significant percentage of online poker players played one table maximized to full-screen, which could explain why most rooms don't bother to optimize for it.
