This is the thing though - if you just played two regular SnGs and cashed in them, you'd have made a much bigger profit.
After a brief moment of thought, I figure these are mostly just a rake-generation gimmick for Full Tilt. Rather than having three people take the money, they spread the prize pool very thin over almost the whole field.
So some people book a small loss, play more games on their way to going broke and pay more rake along the way. Others book a small win, but it'll take them more games to win the same amount they would in a regular SnG, which once again means more rake.
