would anyone consider the competition on Ultimatebet to be softer than sites like Full Tilt Poker and PS?

Nope. Just the opposite. I play all 3 regularly and UB's 25NL rings play like Stars' 50NL. UB is the least populated of the 3, so the sharks should be more likely to be out.
